2025 New Jersey Oyster Festival

October 18, 2025, 12 – 5 pm

Our region has an amazing history and offers some of the finest oysters in the world!

Tickets include all you can eat raw oysters for local purveyors and a souvenir glass.
Food trucks Juilo’s on Main and Fat Boyz will be available as well as offerings from The Oyster Cracker Café, AJ’s Pub, and Missions Spirits for additional purchase.

Speakers Series will be held in the tent.

Music by Steve Byrne 12 – 1:30.

Steve Byrne’s love is Ragtime Blues guitar. His approach is pure and the result is the essence of this most American of music.

 

 

Music by Danny Paisley and The Southern Grass 1:30 – 4pm

Danny Paisley and the Southern Grass play powerful, unadorned, and intense traditional bluegrass. There is no hybrid or genre-bending music here. Their combination of instrumentation and vocals convey the energy and emotion of classic bluegrass and country music.

State of the Oyster Industry
Barney Hollinger

Barney is a 5th generation Port Norris oysterman who serves on the NJ Shellfish Council and State Board of Agriculture. He will reflect on the past year of the oyster industry on the Delaware Bay including farm-raised and wild-caught.

Leasing Our Waters for Shellfish
Edward “Ned” Gaines

Spanning over 100 years, gain a historical perspective of the leasing of grounds throughout the entire New Jersey coastline for the use in shellfish cultivation. Edward “Ned” Gaine is a two decade veteran oyster farmer. He is President of the NJ Shellfisheries Association, Councilman on the NJ Shellfisheries Council, Councilman on the NJ Tidelands Resource Council and was awarded NJ outstanding young farmer of the year in 2020.

RU Informed About Oysters? with Haskin Shellfish Research Laboratory
Paul Coyne, research assistant

Learn about the work that Haskin Shellfish Research Laboratory does surrounding oysters, as well as covering some common questions about oysters.
Paul studies all aspects of oysters and other native NJ shellfish. He specifically studies the genetics of oysters and clams in hopes to further increase our state’s stock and continued food security.

Using Oyster Reefs to Restore the Delaware Bayshore with The American Littoral Society
Lucia Osborne, Delaware Bayshore Program Director
Kerstin Axe, Delaware Bayshore Habitat Restoration Technician

Hear about their projects building oyster reefs to protect and restore the Delaware Bayshore. These projects work to clean the water and help to stop the shoreline from washing away.
Lucia Osborne focuses on using nature-based solutions to increase resilience and equity in coastal communities along the bay. Kerstin Axe supports the Littoral Society’s horseshoe crab tagging and habitat restoration initiatives.
